A fine dessert

Thomas Barlow cakes are appreciated as a fine quality dessert, not just a cake. High end ingredients, like French butter and chocolate and Thomas’ preferred use of unique essences and oils for flavor, create a rich, custom dessert. “The flavors shouldn’t be too sweet; they should compliment each other,” he says. His signature is white or dark chocolate cakes with a crème brûlée filling.  

As with all of his sculpture pieces, Thomas intends for each cake to be remembered. For him, that means striking an even balance between craft and taste. His cake designs are elaborate – his job goes beyond simply baking and icing the cake, all the way to final presentation with the table, flowers and sometimes even an ice stand or centerpiece. The palate of each cake is decadent, he is a master of blending layers of flavor.
